This delicious, high protein meal is high in iron, folic acid and magnesium and takes less than 15 m

Blitva- a Croatian dish famous for its simple recipe which offers an indulgent texture and full flavor is also an incredibly rich source of protein, iron, folic acid and magnesium.

The quick and easy recipe requires few, simple ingredients and is ready in just 15 minutes.

This delicious dish offers 14 g of protein and therefore can be eaten alone or accompanied with a simple protein source such as chickpeas, fish or meat.

Traditionally this dish is just spinach or swiss chard, garlic, olive oil, potato, salt and pepper. However I added onion here for more colour, flavor and an extra immune boost.

I hope you enjoy this simple and delicious healthy meal.

Ingredients:

  • 3 small potatoes chopped to 2cm pieces

  • 3 garlic cloves

  • 100g baby spinach

  • 2tbsp olive oil

  • 1/4 Spanish onion

  • Salt and pepper to taste

Method:

  • Boil potatoes in salted water for 6 to 8 minutes

  • Warm the pan with oil and garlic for 1 minute over medium heat.

  • Add the potatoes and stir fry until soft and flavor has coated well.

  • Stir through the baby spinach until wilted and serve.

  • Add salt and pepper to taste.

I hope you enjoy this delicious recipe.

Until next time, stay deliciously healthy.
