I love to bake, most of the time I go super healthy, sugar free and lower carb. However sometimes I cook for the soul and this recipe is definitely for one of those times.
These muffins are definitely a some-times food and you could certainly play around with the recipe increasing the protein powder and reducing the flour for a better balance. However this recipe as it stands offers a healthy yet indulgent light and fluffy muffin that is to die for.... you ready?
Here goes....
Ingredients:
A small pinch of salt
1/3 of a cup of coconut sugar
Half a cup of organic granulated stevia
1 tsp bicarbonate of soda
1 cup of millet flour
1 cup of water
1 organic egg
1tbsp apple cider vinegar
1/3 cup of vanilla pea protein
5tbsp liquid coconut or macadamia oil
1tsp xantham gum
2tbsp chopped chocolate chunks (here I used chunks of my own homemade vegan chocolate, however you could use any of your favourite chocolate)
Directions:
Preheat the oven to 180degrees
Mix all dry ingredients (not chocolate chunks) together in a bowl until evenly combined.
Mix all wet ingredients together in a separate bowl until evenly combined.
Add wet ingredients to dry ingredients and mix gently until a smooth batter forms. Add chocolate chunks here and mix until evenly spaced.
Bake in the oven for 20-30 minutes, checking occasionally. Muffins are cooked when you can poke with a toothpick all the way to the bottom and remove clean.
