It looks like a simple meal but this cauliflower omelette is a power house of nutrition with a host of incredible health benefits.

Here are the 5 top ingredients, and their benefits, in this simple yet incredible meal:

  1. Eggs contain protein which helps the liver to repair and protect itself from damage. They also contain sulphur, which kickstarts liver detoxification and promotes digestion. Concerned about cholesterol? Organic eggs actually contain the good kind of cholesterol, Hdl, which most of us need more of.

  2. Cauliflower contains sulforaphane which is believed to kill cancer stem cells and therefore inhibits tumor growth. It also contains lots of healthy fibre to promote gut health and assist with removal of wastes. Not to mention plenty of key antioxidants such as vitamin c, betacarotene, anti-inflammatory vitamin k and B vitamins for improved energy, sleep and detox. Researchers have also found sulforophane to be an effective treatment for stomach ulcers and H.Pylori (an ulcer causing bacteria) by inhibiting growth and replication.

  3. Green leafy vegetables are rich in alkalising minerals, which help to preserve energy and keep your bones strong and healthy. Leafy greens such as lettuce and rocket also help to promote digestive enzymes and improve gall bladder function.

  4. Balsamic vinegar contains acetic acid which keeps you fill for longer, balances blood sugar and promotes digestion by stimulating the secretion of digestive enzymes. It contains more antioxidants than blueberries and is a great way to get a daily boost of cancer preventative antioxidant polyphenols, without the health consequences of alcohol.

  5. Garlic is a natural antibiotic and fungicide (kills fungus and yeast - something many of us has too much of thanks to widespread antibiotic and pesticide use). Yeast overgrowth causes thrush, sugar cravings, weight gain, moodiness, athlete's foot and fungal nail infections. Garlic is an effective way to protect your body against cardiovascular disease. Ingredients in garlic act as a blood thinner, helping to prevent strokes, protect from plaque build up in the arteries and reduces blood pressure by up to 8%. While there are many more incredible health benefits to this unbelievable ingredient, I'll leave you with just one more. Studies have found garlic to be able to kill cancer cells in test tubes. Researchers also found that people who eat garlic more frequently, also experienced less stomach, Colo recta and oesophageal cancers. I don't know about you but I know I'll sign up for that thanks!

So you see, this very simple meal, which takes only a few minutes to cook, hosts an incredible number of health benefits.

And without further ado, here's the recipe.

Cauliflower omelette:

  • Take 3 organic eggs and beat.

  • Add 2 cups of grated cauliflower to the mix.

  • Add 1 clove of garlic and any spices you desire. Turmeric would offer the greatest health benefit.

  • Oil a large pan with olive or coconut oil and heat over medium heat.

  • Add the egg and cauliflower mixture and allow to cook until edges are firm.

  • When ready, flip the omelette and cook for 1 minute before serving.

  • Serve with 3 handfuls of green leaves, dressed with balsamic vinegar.
