Want pancakes without the guilt? Try these delicious, light and fluffy pancakes made from nutritious, healthy wholefood ingredients.
2 cups brown rice flour
8tsp coconut cream
1 tsp balsamic
1tbsp Olive oil
2 scoops vivo protein powder
2tsp flaxseed meal
4 -5 cups water (until becomes liquid batter)
Half tsp Baking powder
1-2 tbsp of dairy free choc chips - sugar free or stevia sweetened if possible.
Non-stick pan or spray olive oil for cooking.
Optional: 1tbsp of pistachio nuts, chopped or crushed.
Make vegan buttermilk by mixing coconut cream and balsamic vinegar. Set to one side for 1 minute while preparing mixture below.
Beat eggs, then add rice flour and all remaining ingredients, mix until forms a smooth batter, now add the vegan buttermilk.
Heat pan with a little spray oil for best results. Use a cup, or cup size baking measure, and scoop 1/2 a cup of batter into hot pan. Allow to cook on one side before flipping.
Stack your pancakes high. Dress with crushed pistachios, blueberries or a drizzle of coconut cream for the ultimate indulgence.
